
This week, amidst the Japanese menu and Jap-inspired cocktails at Neon Pigeon, you'll find four specialty desserts (each $16) — three of which are exclusively crafted for chef Jason Licker's three-day pop-up. The winner of Iron Chef Thailand Pastry Edition and Cé La Vi Hong Kong's head pastry chef is known for his intricate balance in the flavours of sweet, salty, sour, bitter and acidic in his creations.
White chocolate sake cream is Licker's signature — a smooth blend of white chocolate and full-bodied Junmai sake accompanied by yuzu-scented berries and a salty toffee crunch. As for the new desserts, matcha lovers should go for the pâte à choux filled with matcha cream, with crispy chocolate pearls nestled underneath. It's served with a sweet coconut tapioca and coconut crumble.
