COCONUTS HOT SPOT — Adrift, the latest celebrity chef restaurant to hit Marina Bay Sands, isn’t some swish spot to be reserved for blowout meals. The menu of Asian-inflected small plates come at relatively reasonable prices. Decked out in warm wood and rich copper tones, the space boasts a nice convivial vibe.
The place is conveniently located in the lobby of the Marina Bay Sands Hotel. Its spacious bar provides cool refreshments like a take on the Singapore Sling ($23) — way brighter and less cloying than the original — and fun snacks such as caramel popcorn with togarashi ($11).

The cocktail list comes care of Sam Ross (of New York’s Attaboy). The famed barkeep’s signature Penicillin ($23 )— scotch, fresh lemon, ginger and honey — has found its way onto Adrift’s menu too.
A project by well-travelled and award-winning Los Angeles chef David Myers (the name behind establishments like Sona, Comme Ca, and David Myers Café in Tokyo), the food at his Singapore outpost is a mish-mash of world influences.
The beef tartare ($26) is seasoned with a big dose of sesame oil so it tastes like raw beef bibimbap. The buckwheat fried chicken with mustard sauce ($18) includes off-cuts from the animal (the chicken comb is a particular treat), in line with Asian traditions.
Myers also brings the Californian artisanal toast trend to Singapore with variations like king crab pimento grilled cheese ($35) and ricotta, preserved lemon and Okinawan black sugar toast ($24).
The restaurant’s side dishes (from $11) also stand out, showcasing seasonally local veggies. Order up braised morning glory (kang kong), and crispy baby potatoes (sourced from Malaysia) with seaweed and parmesan.
For dessert, dig into simple but well executed sweets including the guanaja chocolate pot de crème with burnt marshmallow ($12). Wash it all down with some easy drinking vinos. They offer 120 bottles (mostly New World wines) and $18 by-the-glass options.
