Singapore’s premier annual culinary affair, the World Gourmet Summit themes its 18th outing “The Classics”. Spanning March 26 — April 5, the lavish food fair lauded by the Sydney Morning Herald as “one of the six best gourmet events in the world” returns packed with a diverse array of events. While some soirees are designed to teach guests how to better pair dishes with Italian, Spanish or Portuguese wines, other ticketed events treat the public to local and specially flown in masterchefs’ interpretations of classic ingredients like caviar, Wagyu beef and foie gras. Fordham & Grand World Gourmet Summit 2014 Degustation Menu
March 27 — April 2, Fordham & Grand
For a mere $88++, per person, the adroit chefs of speakeasy watering hole Fordham & Grand will serve courses like “Wagyu Beef, Jerusalem Artichoke & Sucrine Lettuce”, introducing guests to the Semitic vegetable, which tastes much more like a turnip or potato than actual artichoke. Fordham & Grand’s emphatic menu also includes “Smoked Eel, Foie Gras & Macadamia Nuts”, which replaces salmon with a smoked fish of more turgid texture, as well as “Hokkaido Scallop Carpaccio, Konbu & Kaiso Salad”. The off-kilter Carpaccio comprises of scallop that is neither served marinated in one piece, nor cooked in its natural flavour whole. Shunting convention, the shellfish is instead sliced and marinated to complement other flavourful condiments.
Kaluga Queen Caviar Dinner Presented By Indoguna

Celebrated caviar brand Kaluga Queen will be served in dishes such as “Tajima Wagyu On Six Treasure Mushrooms Truffle and Golden Yuzu Caviar” and “Chocolate and Caviar Experience”, while discerningly paired with top-range wines. Fullerton Hotel Executive Chef Sandro Falbo will apply his brilliance and decades of experience to use this choice caviar of numerous royal families to complement dishes like “Organic Egg in Le Cooketier”, “Angel Hair Truffle and Caviar” and “Pan Seared Sustainable Patagonian Tooth Fish & Lobster”.

Heston Blumenthal-trained Chef Ivan Brehm will bring guests on an opulent foie gras adventure, where the Bacchanalia head chef will apply his refined techniques and savoir faire to dishes like “Foie Gras Snow”, foie gras washed consommé, foie gras en torchon and his own invention, “Foie Gras Satay”.
Sunday Brunch Presented By The Macallan & Scottish Seafood Collaborative Group

Few are aware that the Portuguese serve an alternative to red and white wines, known as green wine. Even less people know that Portugal purveys more than just traditional Port wine. The star amongst the wines to be served at this event is the Adelaide Tributa, Quinta do Vallado, which recently garnered a staggering 99 points at an elite wine competition. Besides sampling some of western Iberia’s best produce, guests may also choose to attend the subsequent 8pm event, where Portuguese heartthrob Chef Henrique Sá Pessoa will serve a thoughtful five-course meal to complement Quinta do Vallado’s finest.
Rhone Valley Wine Dinner With Nicolas Perrin Featuring International Masterchef Mathieu Viannay
