It's been awhile since American creative director and photographer Jon Siegel last updated Kopi Uncle, a gorgeous blog reviewing kopi and kaya toast in Singapore, but it's still worth a mention.
Talking up local breakfast favourites from the likes of Chin Mee Chin Confectionery (top photo) and even hawker stalls such as Ah Seng (Hai Nam) at Amoy Street, Siegel admits he's still learning about Singapore's culture. "I'm learning and I want to learn more. Please teach me!" he says on his About page. "Sometimes it takes an outsider to see the beauty in something that the locals have become so used to, that they take it for granted. I doubt Singapore would ever let a Western guy like me run a kopitiam, but if the apocalypse arrives and the doors miraculously open, I will be the first to jump on the opportunity."

Our fingers are itching to petition for this guy's hawker licence!
The only problem is, he hasn't developed a taste for runny eggs — a stable element of the traditional Singapore breakfast — plus he's right about the high calorie count. Anyone wants to volunteer for the job?
