Executive chef Haikal Johari leads the culinary team for one-Michelin-starred restaurant Alma by Juan Amador. But it's a lot harder for the 39-year-old to navigate his way around the kitchen than the rest, as he is paralysed from the shoulder down, having been left wheelchair-bound after a bike racing accident late last year in Thailand.
